Ingredients
- 4 chicken thighs, skin-on
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can (14 oz) crushed tomatoes
- 1 cup chicken broth
- Salt and pepper to taste
- 8 oz pasta of your choice
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the pot and set aside.
- Reduce the heat to medium and add the chopped onion to the pot. Cook until softened, about 5 minutes. Add the minced garlic, cumin, and paprika, and cook for another 2 minutes.
- Pour in the crushed tomatoes and chicken broth, then return the chicken thighs to the pot. Season with salt and pepper. Cover and simmer for 30 minutes, or until the chicken is cooked through.
- While the chicken is simmering, cook the pasta according to the package instructions. Drain and set aside.
- To serve, place a portion of pasta on each plate, top with a chicken thigh, and spoon the tomato sauce over the chicken and pasta. Garnish with fresh parsley.
