Ingredients

  • 4 chicken thighs
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the chicken thighs with salt, pepper, cumin, paprika, and cayenne pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Pour in the crushed tomatoes and chicken broth, then return the chicken thighs to the skillet. Bring the sauce to a simmer, then reduce the heat to low and cover. Cook for 30-35 minutes, or until the chicken is cooked through.
  5. Adjust the seasoning with salt and pepper, if needed. Serve the chicken with the tomato sauce spooned over the top.
