Chicken Xacuti

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch ginger, grated
  • 1/2 cup grated coconut
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon turmeric powder
  • 4-5 dry red chilies
  • 1 cinnamon stick
  • 4-5 cloves
  • 4-5 black peppercorns
  • 1 tablespoon tamarind paste
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Dry roast the cumin seeds, coriander seeds, fennel seeds, dry red chilies, cinnamon stick, cloves, and black peppercorns in a pan until fragrant. Grind the roasted spices into a fine powder.
  2. Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.
  3. Add the chicken pieces and cook until they are browned.
  4. Add the ground spice powder, turmeric powder, and salt. Mix well and cook for a few minutes.
  5. Add the grated coconut and tamarind paste. Stir well and cook for another 10-15 minutes until the chicken is cooked through and the flavors are well combined.
  6. Serve hot with steamed rice or crusty bread.
