Chicken Zambeziana (Frango à Zambeziana)

Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 tablespoons palm oil
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the onions and garlic, and sauté until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the paprika and cumin, coating the chicken evenly.
- Add the red bell pepper and tomatoes, and cook for 5 minutes.
- Pour in the coconut milk, season with salt and pepper, and bring to a simmer.
- Cover the pot and let the chicken simmer for 45-50 minutes, or until cooked through.
- Serve the Chicken Zambeziana hot with rice or bread.
