Chicken Zambeziana (Frango à Zambeziana)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 2 tablespoons palm oil
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the onions and garlic, and sauté until softened.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the paprika and cumin, coating the chicken evenly.
  5. Add the red bell pepper and tomatoes, and cook for 5 minutes.
  6. Pour in the coconut milk, season with salt and pepper, and bring to a simmer.
  7. Cover the pot and let the chicken simmer for 45-50 minutes, or until cooked through.
  8. Serve the Chicken Zambeziana hot with rice or bread.
