Chickpea and Spinach Stew (Bazin Bil-Bisara)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • 1 pound fresh spinach, chopped
  • Salt and pepper to taste
  • Extra virgin olive oil for drizzling

Instructions

  1. Heat a large pot over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic, ground cumin, ground coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes or until the chickpeas are tender.
  4. Stir in the chopped spinach and cook for an additional 5 minutes until wilted.
  5. Season with salt and pepper to taste.
  6. Divide the stew into serving bowls and drizzle with extra virgin olive oil before serving.
