Chickpea and Spinach Stew (Bazin Bil-Bisara)
Bazin Bil-Bisara is a traditional Libyan stew made with chickpeas and spinach, packed with flavors and nutrients. This hearty and comforting dish is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 6 cups vegetable broth
- 1 pound fresh spinach, chopped
- Salt and pepper to taste
- Extra virgin olive oil for drizzling
Instructions
- Heat a large pot over medium heat. Add the chopped onion and cook until translucent.
- Add the minced garlic, ground cumin, ground coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes or until the chickpeas are tender.
- Stir in the chopped spinach and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste.
- Divide the stew into serving bowls and drizzle with extra virgin olive oil before serving.
