Chickpea and Vegetable Curry (Bazin Bil-Qurma)
Bazin Bil-Qurma is a traditional Libyan dish that features a flavorful chickpea and vegetable curry. This hearty and aromatic dish is perfect for a comforting family meal or a gathering with friends.
Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic and diced bell pepper to the pot. Cook for a few minutes until the bell pepper starts to soften.
- Stir in the chopped tomatoes, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for another 5 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and add the cooked chickpeas. Season with salt and pepper to taste. Simmer for 20-25 minutes, allowing the flavors to develop.
- Once the curry has thickened slightly, remove from heat. Serve the Bazin Bil-Qurma hot, garnished with fresh cilantro.
