Chickpea and Vegetable Curry (Bazin Bil-Qurma)

Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 cup vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic and diced bell pepper to the pot. Cook for a few minutes until the bell pepper starts to soften.
  3. Stir in the chopped tomatoes, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for another 5 minutes, allowing the flavors to meld.
  4. Pour in the vegetable broth and add the cooked chickpeas. Season with salt and pepper to taste. Simmer for 20-25 minutes, allowing the flavors to develop.
  5. Once the curry has thickened slightly, remove from heat. Serve the Bazin Bil-Qurma hot, garnished with fresh cilantro.
