Chickpea and Vegetable Stew (Nohutlu Sebze Yemeği)
Nohutlu Sebze Yemeği, also known as Chickpea and Vegetable Stew, is a traditional dish from Crimean Tatar cuisine. This hearty and flavorful stew is packed with nutritious vegetables and protein-rich chickpeas, making it a perfect option for a healthy and satisfying meal.
Ingredients
- 1 cup dried chickpeas, soaked overnight
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 red bell pepper, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 cups vegetable broth
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced carrots, cubed potatoes, and chopped red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, minced garlic, paprika, cumin, salt, and pepper. Cook for another 2 minutes.
- Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the chickpeas are tender.
- Once the stew is ready, adjust the seasoning if needed and serve hot, garnished with fresh parsley.
