Chickpea and Vegetable Stew (Nohutlu Sebze Yemeği)

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 3 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the diced carrots, cubed potatoes, and chopped red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the diced tomatoes, minced garlic, paprika, cumin, salt, and pepper. Cook for another 2 minutes.
  4. Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the chickpeas are tender.
  6. Once the stew is ready, adjust the seasoning if needed and serve hot, garnished with fresh parsley.
