Chickpea and Vegetable Stew (Tajine de Légumes)

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 carrots, peeled and sliced
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat the olive oil in a large tajine or pot over medium heat.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the cumin, turmeric, and paprika, and cook for 1 minute.
  4. Add the chickpeas, carrots, zucchinis, and red bell pepper, and cook for 5 minutes.
  5. Pour in the diced tomatoes and vegetable broth. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
  7. Garnish with fresh cilantro before serving.
