Chickpea and Vegetable Stew (Tajine de Légumes)
Tajine de Légumes is a traditional Moroccan stew that is bursting with flavor and packed with nutritious vegetables and chickpeas. This hearty and aromatic dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 carrots, peeled and sliced
- 2 zucchinis, sliced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the olive oil in a large tajine or pot over medium heat.
- Add the onion and garlic, and cook until softened.
- Stir in the cumin, turmeric, and paprika, and cook for 1 minute.
- Add the chickpeas, carrots, zucchinis, and red bell pepper, and cook for 5 minutes.
- Pour in the diced tomatoes and vegetable broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
- Garnish with fresh cilantro before serving.
