Chickpea Curry (Къухумаш)

Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup coconut milk
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat the oil over medium heat. Add the chopped onion and cook until it becomes translucent.
  2. Add the minced garlic and grated ginger to the pan. Sauté for a few minutes until fragrant.
  3. Stir in the diced tomatoes and cook until they soften.
  4. Add the ground cumin, coriander, turmeric, and cayenne pepper to the pan. Stir well to combine with the other ingredients.
  5. Pour in the coconut milk and cooked chickpeas. Season with salt to taste. Simmer for 15-20 minutes, allowing the flavors to meld together.
  6. Garnish the chickpea curry with fresh cilantro before serving.
