Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 2 tomatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup coconut milk
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- In a large pan, heat the oil over medium heat. Add the chopped onion and cook until it becomes translucent.
- Add the minced garlic and grated ginger to the pan. Sauté for a few minutes until fragrant.
- Stir in the diced tomatoes and cook until they soften.
- Add the ground cumin, coriander, turmeric, and cayenne pepper to the pan. Stir well to combine with the other ingredients.
- Pour in the coconut milk and cooked chickpeas. Season with salt to taste. Simmer for 15-20 minutes, allowing the flavors to meld together.
- Garnish the chickpea curry with fresh cilantro before serving.
