Chickpea Curry (chana Masala)

Ingredients
- 2 cans (15 oz) chickpeas, drained and rinsed
- 2 tablespoons oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, finely chopped
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon chili powder
- Salt to taste
- 1 cup water
- Fresh cilantro, chopped for garnish
Instructions
- Heat oil in a large pan over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic and grated ginger to the pan. Cook for a few minutes until fragrant.
- Stir in the chopped tomatoes and cook until they are soft and the oil starts to separate.
- Add the ground cumin, coriander, turmeric, garam masala, chili powder, and salt. Cook for a minute to toast the spices.
- Pour in the drained chickpeas and water. Stir well and bring the curry to a simmer. Cook for 15-20 minutes, stirring occasionally, until the curry thickens.
- Garnish with chopped cilantro before serving.
