Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, finely chopped
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup water
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic and grated ginger to the pan. Cook for a few minutes until fragrant.
  3. Stir in the chopped tomatoes and cook until they are soft and the oil starts to separate.
  4. Add the ground cumin, coriander, turmeric, garam masala, chili powder, and salt. Cook for a minute to toast the spices.
  5. Pour in the drained chickpeas and water. Stir well and bring the curry to a simmer. Cook for 15-20 minutes, stirring occasionally, until the curry thickens.
  6. Garnish with chopped cilantro before serving.
