Chickpea Curry (punjabi Chole)
Punjabi Chole, also known as Chickpea Curry, is a popular dish from the Punjabi cuisine. It is a flavorful and spicy curry made with chickpeas, onions, tomatoes, and a blend of aromatic spices.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 green chilies, slit
- 1 inch ginger, grated
- 4 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon amchur (dried mango powder)
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a large pot and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the grated ginger and minced garlic, and sauté for a few minutes.
- Stir in the pureed tomatoes, green chilies, and all the spices. Cook the masala until the oil separates from the mixture.
- Add the soaked chickpeas and mix well. Pour in enough water to cover the chickpeas and bring the curry to a boil.
- Reduce the heat, cover the pot, and simmer for 30-40 minutes or until the chickpeas are tender.
- Garnish with fresh cilantro leaves and serve hot with rice or naan.
