Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 green chilies, slit
  • 1 inch ginger, grated
  • 4 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dried mango powder)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a large pot and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the grated ginger and minced garlic, and sauté for a few minutes.
  3. Stir in the pureed tomatoes, green chilies, and all the spices. Cook the masala until the oil separates from the mixture.
  4. Add the soaked chickpeas and mix well. Pour in enough water to cover the chickpeas and bring the curry to a boil.
  5. Reduce the heat, cover the pot, and simmer for 30-40 minutes or until the chickpeas are tender.
  6. Garnish with fresh cilantro leaves and serve hot with rice or naan.
