Chickpea Curry With Fried Bread (chole Bhature)

Ingredients

  • 2 cups chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon dried mango powder (amchur)
  • Salt to taste
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup yogurt
  • Oil for frying

Instructions

  1. Pressure cook the soaked chickpeas with salt until soft.
  2. Heat oil in a pan, add cumin seeds, and sauté the onions until golden brown.
  3. Add ginger-garlic paste and sauté for a minute.
  4. Stir in the tomato puree, turmeric, red chili powder, garam masala, and dried mango powder. Cook until the oil separates.
  5. Add the cooked chickpeas and simmer for 10 minutes.
  6. For the fried bread (bhature), mix all-purpose flour, baking powder, and yogurt to form a smooth dough. Let it rest for 2 hours.
  7. Divide the dough into small balls and roll them into circles. Deep fry in hot oil until puffed and golden brown.
  8. Serve the chickpea curry with the fried bread.
