Chickpea Curry With Fried Bread (punjabi Chole Bhature)
Punjabi Chole Bhature is a popular North Indian dish consisting of spicy chickpea curry served with fried bread. It's a flavorful and satisfying dish that is perfect for a special occasion or a weekend treat.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 green chilies, slit
- 1-inch ginger, grated
- 4 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric
- 2 teaspoons ground coriander
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1 teaspoon dried mango powder (amchur)
- Salt to taste
- Fresh coriander leaves for garnish
- Oil for frying
- 4 bhature (fried bread)
Instructions
- Pressure cook the soaked chickpeas with salt until soft.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the onions and sauté until golden brown.
- Add the ginger, garlic, and green chilies. Sauté for a few minutes.
- Stir in the tomato puree and cook until the oil separates.
- Add the turmeric, ground coriander, garam masala, red chili powder, and dried mango powder. Cook for a few minutes.
- Add the cooked chickpeas along with some of the cooking liquid. Simmer for 15-20 minutes.
- Garnish with fresh coriander leaves.
- For the bhature, divide the dough into balls, roll out into circles, and deep fry until puffed and golden.
