Chickpea Curry With Fried Bread (punjabi Chole Bhature)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 green chilies, slit
  • 1-inch ginger, grated
  • 4 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 1 teaspoon dried mango powder (amchur)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Oil for frying
  • 4 bhature (fried bread)

Instructions

  1. Pressure cook the soaked chickpeas with salt until soft.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the onions and sauté until golden brown.
  3. Add the ginger, garlic, and green chilies. Sauté for a few minutes.
  4. Stir in the tomato puree and cook until the oil separates.
  5. Add the turmeric, ground coriander, garam masala, red chili powder, and dried mango powder. Cook for a few minutes.
  6. Add the cooked chickpeas along with some of the cooking liquid. Simmer for 15-20 minutes.
  7. Garnish with fresh coriander leaves.
  8. For the bhature, divide the dough into balls, roll out into circles, and deep fry until puffed and golden.
