Ingredients
- 2 cups chickpea flour
- 2 1/2 cups water
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a large bowl, whisk together the chickpea flour, water, olive oil, salt, and black pepper until smooth. Let the batter rest for 30 minutes.
- Preheat the oven to 450°F (230°C). Place a 10-inch cast iron skillet in the oven to heat.
- Stir the chopped parsley into the batter.
- Carefully remove the hot skillet from the oven and pour in the batter, spreading it out evenly.
- Bake for 20-25 minutes, or until the flatbread is set and the edges are golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
