Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 lb lamb, cut into cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Heat some oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the diced tomatoes, sliced carrots, and diced potatoes. Cook for a few minutes.
  4. Season the mixture with cumin, paprika, turmeric, salt, and pepper. Stir well to combine.
  5. Drain the soaked chickpeas and add them to the pot. Pour in the chicken or vegetable broth.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the chickpeas are tender and the meat is cooked through.
  7. Adjust the seasoning if needed. Serve the kъухумаш hot, garnished with fresh parsley.
