Къухумаш (Chickpea Stew) is a traditional dish from Chechen cuisine, known for its rich flavors and hearty ingredients. This stew is a perfect combination of tender chickpeas, savory meat, and aromatic spices, creating a comforting and satisfying meal.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 lb lamb, cut into cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 4 cups chicken or vegetable broth
- Fresh parsley for garnish
Instructions
- Heat some oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Stir in the diced tomatoes, sliced carrots, and diced potatoes. Cook for a few minutes.
- Season the mixture with cumin, paprika, turmeric, salt, and pepper. Stir well to combine.
- Drain the soaked chickpeas and add them to the pot. Pour in the chicken or vegetable broth.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the chickpeas are tender and the meat is cooked through.
- Adjust the seasoning if needed. Serve the kъухумаш hot, garnished with fresh parsley.
