Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 tomatoes, chopped
  • 1 red bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat some olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the diced carrots, chopped tomatoes, and red bell pepper. Cook for a few minutes until the vegetables start to soften.
  4. Add the soaked chickpeas, paprika, cumin, and vegetable broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chickpeas are tender.
  6. Adjust the seasoning if needed, and serve the chickpea stew hot.
