Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat some olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the diced carrots, chopped tomatoes, and red bell pepper. Cook for a few minutes until the vegetables start to soften.
- Add the soaked chickpeas, paprika, cumin, and vegetable broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chickpeas are tender.
- Adjust the seasoning if needed, and serve the chickpea stew hot.
