Ingredients
- 2 cans (15 oz) chickpeas, drained and rinsed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, cumin, paprika, and cayenne pepper, and cook for 1 minute.
- Add the diced bell pepper and cook for another 3 minutes.
- Pour in the diced tomatoes, vegetable broth, and drained chickpeas. Season with salt and pepper.
- Bring the stew to a simmer, then reduce the heat and let it simmer for 25-30 minutes, stirring occasionally.
- Adjust the seasoning if needed and serve hot.
