Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, paprika, and cayenne pepper, and cook for 1 minute.
  4. Add the diced bell pepper and cook for another 3 minutes.
  5. Pour in the diced tomatoes, vegetable broth, and drained chickpeas. Season with salt and pepper.
  6. Bring the stew to a simmer, then reduce the heat and let it simmer for 25-30 minutes, stirring occasionally.
  7. Adjust the seasoning if needed and serve hot.
