Chifa de Pollo (Peruvian-Chinese Chicken Stir-Fry)

Ingredients

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 4 green onions, sliced
  • Cooked white rice, for serving

Instructions

  1. In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and sugar. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry until cooked through. Remove the chicken from the wok and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the wok. Add the bell peppers, snap peas, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the wok. Pour the sauce over the chicken and vegetables. Stir-fry for another 2-3 minutes until everything is heated through and coated in the sauce.
  5. Stir in the sliced green onions. Remove from heat.
  6. Serve the Peruvian-Chinese Chicken Stir-Fry over cooked white rice.
