Chifa de Pollo (Peruvian-Chinese Chicken Stir-Fry)
Peruvian-Chinese Chicken Stir-Fry, also known as Chifa de Pollo, is a delicious fusion dish that combines the flavors of Chinese stir-fry with Peruvian ingredients. This dish is a popular part of the unique Peruvian-Chinese cuisine, which developed from the influence of Chinese immigrants in Peru.
Ingredients
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 4 green onions, sliced
- Cooked white rice, for serving
Instructions
- In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and sugar. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry until cooked through. Remove the chicken from the wok and set aside.
- Heat the remaining tablespoon of vegetable oil in the wok. Add the bell peppers, snap peas, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the wok. Pour the sauce over the chicken and vegetables. Stir-fry for another 2-3 minutes until everything is heated through and coated in the sauce.
- Stir in the sliced green onions. Remove from heat.
- Serve the Peruvian-Chinese Chicken Stir-Fry over cooked white rice.
