Ingredients
- 8 large mushrooms, stems removed and reserved
- 1 cup chikanda (African wild orchid tubers), finely grated
- 2 cups nsima (maize porridge)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 teaspoon ground paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the cooking oil in a pan over medium heat. Add the chopped onion and cook until translucent.
- Add the diced tomatoes, grated chikanda, paprika, cumin, salt, and pepper. Cook for 5 minutes, then remove from heat.
- Stuff the mushroom caps with the chikanda mixture and place them on a baking sheet.
- Bake for 20-25 minutes, or until the mushrooms are tender.
- While the mushrooms are baking, prepare the nsima according to package instructions.
- Serve the stuffed mushrooms on a bed of nsima and enjoy!
