Ingredients

  • 8 large mushrooms, stems removed and reserved
  • 1 cup chikanda (African wild orchid tubers), finely grated
  • 2 cups nsima (maize porridge)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons cooking oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the cooking oil in a pan over medium heat. Add the chopped onion and cook until translucent.
  3. Add the diced tomatoes, grated chikanda, paprika, cumin, salt, and pepper. Cook for 5 minutes, then remove from heat.
  4. Stuff the mushroom caps with the chikanda mixture and place them on a baking sheet.
  5. Bake for 20-25 minutes, or until the mushrooms are tender.
  6. While the mushrooms are baking, prepare the nsima according to package instructions.
