Ingredients

  • 1 lb (450g) beef stew meat, cut into small cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup corn kernels
  • 1 cup pumpkin or butternut squash, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups beef or vegetable broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the carrots, potatoes, green beans, corn, and pumpkin or squash to the pot. Stir in the paprika, cumin, salt, and pepper.
  4. Return the browned beef to the pot and pour in the beef or vegetable broth. Bring the stew to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender and the vegetables are cooked through.
