Chilean-style Stuffed Peppers (Ají Rellenos)

Ingredients
- 4 large bell peppers
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup tomato sauce
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup grated cheese (optional)
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground beef, onion, and garlic until the meat is browned and the onion is tender. Drain any excess fat.
- Stir in the cooked rice, tomato sauce, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Preheat the oven to 350°F (175°C).
- Stuff the bell peppers with the meat mixture and place them in a baking dish. If using cheese, sprinkle it on top of the stuffed peppers.
- Bake for 30-35 minutes, or until the peppers are tender.
- Serve the ají rellenos hot and enjoy!
