Chilean-style Stuffed Peppers (Ají Rellenos)

Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheese (optional)

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a skillet, cook the ground beef, onion, and garlic until the meat is browned and the onion is tender. Drain any excess fat.
  3. Stir in the cooked rice, tomato sauce, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Stuff the bell peppers with the meat mixture and place them in a baking dish. If using cheese, sprinkle it on top of the stuffed peppers.
  6. Bake for 30-35 minutes, or until the peppers are tender.
  7. Serve the ají rellenos hot and enjoy!
