Chiles Rellenos Al Estilo Costarricense (costa Rican Style Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the cooked rice, tomato sauce, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
  6. Remove the skillet from the heat and stir in half of the shredded cheese.
  7. Stuff the bell peppers with the beef and rice mixture and place them in a baking dish. Sprinkle the remaining cheese on top of the stuffed peppers.
  8. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
