Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheese
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the cooked rice, tomato sauce, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Remove the skillet from the heat and stir in half of the shredded cheese.
- Stuff the bell peppers with the beef and rice mixture and place them in a baking dish. Sprinkle the remaining cheese on top of the stuffed peppers.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
