Chili Crab Delight

Ingredients
- 2 lbs (900g) fresh crab, cleaned and cracked
- 1/4 cup (60ml) vegetable oil
- 5 cloves garlic, minced
- 1 onion, finely chopped
- 2 red chilies, finely sliced
- 1/4 cup (60g) tomato ketchup
- 1/4 cup (60ml) chili sauce
- 1/4 cup (60ml) water
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 egg, beaten
- 2 stalks scallions, chopped
Instructions
- Heat the vegetable oil in a large wok or skillet over medium heat.
- Add the minced garlic, chopped onion, and sliced red chilies. Stir-fry for 2-3 minutes until fragrant.
- Add the tomato ketchup, chili sauce, water, soy sauce, and sugar. Stir well to combine the sauce.
- Add the cleaned and cracked crab to the wok. Stir-fry for 5 minutes, coating the crab with the chili sauce.
- Pour the beaten egg over the crab and stir quickly to coat the crab with the egg.
- Cover the wok and let the crab cook for another 8-10 minutes, or until the crab is fully cooked and the sauce has thickened.
- Sprinkle chopped scallions over the chili crab before serving.
