Ingredients

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1 lb tomatillos, husked and rinsed
  • 2 poblano peppers, seeded and chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the pork cubes over medium-high heat for 5 minutes.
  2. Add the tomatillos, poblano peppers, onion, and garlic to the pot and cook for another 5 minutes.
  3. Pour in the chicken broth and add the cilantro, cumin, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
  4. Once the pork is tender and the sauce has thickened, the chili verde is ready to serve. Enjoy with rice, tortillas, or warm crusty bread.
