Chili Verde
Chili verde is a delicious and flavorful Mexican stew made with tender chunks of pork simmered in a tangy green sauce made from tomatillos, green chilies, and fresh herbs. This hearty and satisfying dish is perfect for a cozy dinner or a gathering with friends and family.
Ingredients
- 2 lbs pork shoulder, cut into 1-inch cubes
- 1 lb tomatillos, husked and rinsed
- 2 poblano peppers, seeded and chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, brown the pork cubes over medium-high heat for 5 minutes.
- Add the tomatillos, poblano peppers, onion, and garlic to the pot and cook for another 5 minutes.
- Pour in the chicken broth and add the cilantro, cumin, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
- Once the pork is tender and the sauce has thickened, the chili verde is ready to serve. Enjoy with rice, tortillas, or warm crusty bread.
