Ingredients
- 4 large russet potatoes, scrubbed
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups whole milk
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Prick the potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until tender. Let cool, then peel and coarsely mash.
- In a large pot, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, stirring constantly. Gradually whisk in the milk and bring to a boil. Cook and stir for 2 minutes or until thickened.
- Reduce heat to low. Add the mashed potatoes, sour cream, and half of the bacon. Cook and stir until heated through. Stir in the cheese until melted. Season with salt and pepper.
- Ladle the soup into bowls and top with remaining bacon, green onions, and additional cheese if desired.
