Chilis Southwest Eggrolls
Chili's Southwest Eggrolls are a delicious appetizer that combines the flavors of Tex-Mex cuisine with the convenience of finger food. These crispy eggrolls are filled with a savory mixture of chicken, black beans, corn, and cheese, and served with a creamy avocado ranch dipping sauce.
Ingredients
- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced red bell pepper
- 2 green onions, thinly sliced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 eggroll wrappers
- Vegetable oil for frying
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, Monterey Jack cheese, red bell pepper, green onions, cumin, chili powder, salt, and black pepper. Mix well.
- Place a spoonful of the chicken mixture in the center of an eggroll wrapper. Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edges with a little water.
- Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the eggrolls in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
- Serve the Southwest eggrolls with avocado ranch dipping sauce.
