Chili's Southwest Eggrolls are a delicious appetizer that combines the flavors of Tex-Mex cuisine with the convenience of finger food. These crispy eggrolls are filled with a savory mixture of chicken, black beans, corn, and cheese, and served with a creamy avocado ranch dipping sauce.

Chilis Southwest Eggrolls

Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup diced red bell pepper
  • 2 green onions, thinly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, Monterey Jack cheese, red bell pepper, green onions, cumin, chili powder, salt, and black pepper. Mix well.
  2. Place a spoonful of the chicken mixture in the center of an eggroll wrapper. Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edges with a little water.
  3. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the eggrolls in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
  4. Serve the Southwest eggrolls with avocado ranch dipping sauce.
