Chilli Crab (chilli Crab Pasta)

Ingredients

  • 500g linguine pasta
  • 1kg live mud crabs
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1/2 cup chicken stock
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Coriander leaves for garnish

Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.
  2. Clean and prepare the crabs by removing the top shell and gills. Crack the claws slightly.
  3. Heat vegetable oil in a large wok or pan over medium heat. Add the onion, garlic, and chilies. Cook until fragrant.
  4. Add the tomato paste, soy sauce, sugar, and chicken stock. Stir to combine.
  5. Add the crabs to the wok and toss to coat in the sauce. Cover and cook for 8-10 minutes, or until the crabs are cooked through.
  6. Add the cooked linguine to the wok and toss to coat in the chili crab sauce.
  7. Season with salt and pepper to taste.
  8. Transfer to a serving dish and garnish with coriander leaves.
