Chimodho Chicken (Free-Range Chicken)

Ingredients

  • 1 whole free-range chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons cooking oil
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups chicken broth

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions and cook until softened.
  3. Add the minced garlic, grated ginger, paprika, coriander, cumin, turmeric, salt, and pepper. Stir well to combine.
  4. Add the chicken pieces to the pot and brown on all sides.
  5. Once the chicken is browned, add the chopped tomatoes and chicken broth. Bring to a simmer.
  6. Cover the pot and let the chicken simmer for 45-50 minutes, or until the chicken is cooked through and tender.
  7. Adjust the seasoning if needed, then serve the free-range chicken hot with your favorite side dishes.
