Chimodho Chicken (Free-Range Chicken)
Free-Range Chicken, also known as Chimodho Chicken, is a traditional Zimbabwean dish that is rich in flavor and history. This recipe is a celebration of Zimbabwean cuisine and the use of fresh, free-range ingredients.
Ingredients
- 1 whole free-range chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons cooking oil
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 cups chicken broth
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions and cook until softened.
- Add the minced garlic, grated ginger, paprika, coriander, cumin, turmeric, salt, and pepper. Stir well to combine.
- Add the chicken pieces to the pot and brown on all sides.
- Once the chicken is browned, add the chopped tomatoes and chicken broth. Bring to a simmer.
- Cover the pot and let the chicken simmer for 45-50 minutes, or until the chicken is cooked through and tender.
- Adjust the seasoning if needed, then serve the free-range chicken hot with your favorite side dishes.
