Ingredients
- 2 cups cooked free-range chicken, shredded
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 tablespoons curry powder
- 1/2 cup frozen peas
- 1/4 cup carrots, diced
- Salt and pepper to taste
- 2 sheets puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- In a pan, sauté the onion, garlic, and ginger until fragrant.
- Add the curry powder and cook for another minute.
- Stir in the shredded chicken, peas, and carrots. Season with salt and pepper. Allow the filling to cool.
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry and cut into squares.
- Place a spoonful of the chicken filling onto each pastry square. Fold the pastry over to form a triangle and crimp the edges with a fork to seal.
- Brush the curry puffs with the beaten egg wash.
- Bake for 20-25 minutes or until golden brown.
- Serve the curry puffs hot and enjoy!
