Ingredients

  • 2 cups cooked free-range chicken, shredded
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons curry powder
  • 1/2 cup frozen peas
  • 1/4 cup carrots, diced
  • Salt and pepper to taste
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a pan, sauté the onion, garlic, and ginger until fragrant.
  2. Add the curry powder and cook for another minute.
  3. Stir in the shredded chicken, peas, and carrots. Season with salt and pepper. Allow the filling to cool.
  4. Preheat the oven to 200°C (400°F).
  5. Roll out the puff pastry and cut into squares.
  6. Place a spoonful of the chicken filling onto each pastry square. Fold the pastry over to form a triangle and crimp the edges with a fork to seal.
  7. Brush the curry puffs with the beaten egg wash.
  8. Bake for 20-25 minutes or until golden brown.
  9. Serve the curry puffs hot and enjoy!
