Chin Chin (banana And Coconut Bread)
Chin Chin is a popular snack in Sierra Leone, made from ripe bananas and coconut. It's a delicious and easy-to-make bread that can be enjoyed at any time of the day.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup shredded coconut
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, shredded coconut, melted butter, sugar, and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
