Chinese Stuffed Peppers (rellenos De Chino)
Chinese Stuffed Peppers, also known as Rellenos de Chino, are a delicious fusion dish from Puerto Rican Chinese cuisine. These peppers are filled with a flavorful mixture of ground meat, vegetables, and rice, then cooked to perfection.
Ingredients
- 4 large bell peppers
- 1 pound ground beef or pork
- 1 cup cooked white rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 cup frozen peas
- 1/2 cup corn kernels
- Salt and pepper to taste
- 1 cup tomato sauce
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the ground meat, cooked rice, onion, garlic, cumin, paprika, peas, corn, salt, and pepper. Mix well.
- Stuff the bell peppers with the meat and rice mixture.
- In a separate bowl, mix together the tomato sauce and chicken broth. Pour the mixture into a baking dish.
- Place the stuffed peppers in the baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is cooked through.
- Sprinkle with chopped cilantro before serving.
