Chinese Stuffed Peppers (rellenos De Chino)

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef or pork
  • 1 cup cooked white rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 cup frozen peas
  • 1/2 cup corn kernels
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the ground meat, cooked rice, onion, garlic, cumin, paprika, peas, corn, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the meat and rice mixture.
  5. In a separate bowl, mix together the tomato sauce and chicken broth. Pour the mixture into a baking dish.
  6. Place the stuffed peppers in the baking dish and cover with foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is cooked through.
  8. Sprinkle with chopped cilantro before serving.
