Chingri Mankho (assamese Style Prawn Curry)

Ingredients

  • 500g prawns, cleaned and deveined
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup mustard oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 4-5 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and fry the prawns until they turn pink. Remove and keep aside.
  2. In the same pan, add more oil if needed and sauté the chopped onions until golden brown.
  3. Add ginger-garlic paste and cook for a minute.
  4. Add turmeric, red chili, cumin, and coriander powders. Stir well.
  5. Pour in the tomato puree and cook until the oil separates.
  6. Add the fried prawns, green chilies, and salt. Mix well and cook for 5-7 minutes.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice.
