Chingri Mankho (assamese Style Prawn Curry)
Chingri Mankho is a traditional Assamese style prawn curry that is bursting with flavors. This dish is a perfect combination of succulent prawns and aromatic spices, making it a delightful addition to any meal.
Ingredients
- 500g prawns, cleaned and deveined
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/2 cup mustard oil
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 4-5 green chilies, slit
- 1 tablespoon ginger-garlic paste
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and fry the prawns until they turn pink. Remove and keep aside.
- In the same pan, add more oil if needed and sauté the chopped onions until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Add turmeric, red chili, cumin, and coriander powders. Stir well.
- Pour in the tomato puree and cook until the oil separates.
- Add the fried prawns, green chilies, and salt. Mix well and cook for 5-7 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
