Ingredients

  • 1 cup grated Paraguayan cheese
  • 1 cup tapioca flour
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 3 eggs

  • 1/4 teaspoon salt
  • 1/2 cup cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a large bowl, mix the grated Paraguayan cheese, tapioca flour, milk, melted butter, and sugar until well combined.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and salt.
  4. Pour half of the mixture into the prepared springform pan.
  5. In a separate bowl, beat the cream cheese until smooth. Spread the cream cheese over the batter in the pan.
  6. Pour the remaining batter over the cream cheese layer.
  7. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the center is set.
  8. Allow the chipa cheesecake to cool before removing it from the pan. Refrigerate for at least 2 hours before serving.
