Chocolate Mousse Cake

Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 1/2 cups semisweet chocolate chips
- 3 cups heavy cream, divided
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
- 1/4 cup water
- 1 tablespoon unflavored gelatin
Instructions
- In a bowl, mix the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a microwave-safe bowl, heat the chocolate chips and 1 cup of heavy cream in 30-second intervals, stirring until smooth. Stir in the vanilla extract.
- In a separate bowl, whip the remaining 2 cups of heavy cream with powdered sugar until stiff peaks form.
- In a small saucepan, sprinkle the gelatin over the water and let it bloom for 5 minutes. Then heat the mixture over low heat, stirring until the gelatin dissolves.
- Gently fold the whipped cream into the chocolate mixture, then fold in the gelatin mixture. Pour the mousse over the crust in the springform pan.
- Refrigerate the cake for at least 4 hours or until set. Serve chilled and enjoy!
