Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups semisweet chocolate chips
  • 3 cups heavy cream, divided
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup water
  • 1 tablespoon unflavored gelatin

Instructions

  1. In a bowl, mix the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. In a microwave-safe bowl, heat the chocolate chips and 1 cup of heavy cream in 30-second intervals, stirring until smooth. Stir in the vanilla extract.
  3. In a separate bowl, whip the remaining 2 cups of heavy cream with powdered sugar until stiff peaks form.
  4. In a small saucepan, sprinkle the gelatin over the water and let it bloom for 5 minutes. Then heat the mixture over low heat, stirring until the gelatin dissolves.
  5. Gently fold the whipped cream into the chocolate mixture, then fold in the gelatin mixture. Pour the mousse over the crust in the springform pan.
  6. Refrigerate the cake for at least 4 hours or until set. Serve chilled and enjoy!
