Chocolate Mousse Cheesecake

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup semisweet chocolate chips
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared springform pan.
  3. Melt the chocolate chips in a microwave or using a double boiler. Set aside to cool slightly.
  4. In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the melted chocolate.
  5. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake in the preheated oven for 45 minutes, or until the center is almost set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
  7. In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the chilled cheesecake.
