Chole Bhature Burritos

Ingredients

  • 2 cups chickpeas, cooked
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 4 bhature (fried bread)
  • 1 cup shredded cabbage
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1/2 cup plain yogurt

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until onions turn golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add pureed tomatoes and cook until the oil separates.
  3. Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
  4. Add cooked chickpeas and 1 cup of water. Simmer for 15-20 minutes until the curry thickens.
  5. To assemble the burritos, place a bhature on a plate. Spoon some chickpea curry onto the center, then top with shredded cabbage, diced tomatoes, chopped cilantro, and a dollop of yogurt.
  6. Roll the bhature to form a burrito and serve hot.
