Chole Bhature is a popular North Indian dish consisting of spicy chickpeas (chole) and deep-fried bread (bhature). This recipe takes the classic dish to the next level with a few extra ingredients and a burst of flavors.

Chole Bhature Extravaganza

Ingredients

  • 2 cups chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1 inch ginger, grated
  • 3 cloves garlic, minced
  • 1 green chili, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 1/2 cup yogurt
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup yogurt
  • 1/4 cup fresh coriander leaves, chopped
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Pressure cook the soaked chickpeas with salt until soft.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add onions, ginger, and garlic. Saute until golden brown.
  3. Add tomato puree, turmeric powder, coriander powder, garam masala, red chili powder, and salt. Cook until the oil separates.
  4. Add the cooked chickpeas and cook for 5 minutes. Then, add yogurt and simmer for another 10 minutes.
  5. For the bhature, mix flour, baking powder, yogurt, and salt. Knead into a soft dough and let it rest for 2 hours.
  6. Divide the dough into small balls and roll out into circles. Deep fry in hot oil until puffed and golden brown.
  7. Serve the chole with hot bhature, garnished with fresh coriander leaves.
