Chole Bhature Tacos

Ingredients

  • 2 cups chickpeas, cooked
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1/4 cup fresh coriander leaves, chopped
  • 4 bhature or tortillas
  • 1/4 cup tamarind chutney
  • 1/4 cup mint-coriander chutney

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until onions turn golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add diced tomatoes and cook until they turn mushy.
  3. Add coriander powder, garam masala, turmeric powder, and salt. Mix well and cook for a few minutes.
  4. Add cooked chickpeas and mix until well combined. Cook for 5-7 minutes, then garnish with fresh coriander leaves.
  5. Warm the bhature or tortillas. Place a spoonful of the chickpea curry on each, drizzle with tamarind and mint-coriander chutney, and fold into tacos.
