Ingredients

  • 500g frog legs, cut into pieces
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/4 cup Sichuan peppercorns
  • 10 dried red chilies
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 green onions, chopped
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • Salt to taste

Instructions

  1. Coat the frog legs with cornstarch.
  2. Heat the vegetable oil in a wok over high heat.
  3. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
  4. Add the garlic, ginger, and green onions, and stir-fry for a minute.
  5. Add the frog legs and stir-fry until they are cooked through.
  6. Stir in the Shaoxing wine, soy sauce, sugar, and salt.
  7. Transfer to a serving plate and serve hot.
