Ingredients

  • 1 lb beef, thinly sliced
  • 1 onion, sliced
  • 2 cups cabbage, shredded
  • 1 cup carrots, julienned
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 cups beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 6 cups cooked rice, for serving

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add beef and cook until browned.
  3. Add onions and garlic, and cook until onions are translucent.
  4. Pour in soy sauce and beef broth, then bring to a simmer.
  5. Add carrots, green beans, bell pepper, and cabbage. Simmer for 15-20 minutes until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve the chop suey over cooked rice.
