Ingredients

  • 1 cup broccoli florets

  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1/4 cup soy sauce
  • 1 cup vegetable broth
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix the soy sauce, vegetable broth, and cornstarch solution. Set aside.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the garlic and onion, and stir-fry for 1-2 minutes until fragrant.
  3. Add the broccoli, cauliflower, carrots, snow peas, and bell peppers to the wok. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
  4. Pour the soy sauce mixture over the vegetables and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens and coats the vegetables evenly.
  5. Season with salt and pepper to taste. Remove from heat and transfer to a serving dish.
