Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 100g chorizo, finely chopped
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 50g Manchego cheese, grated
  • 2 tablespoons breadcrumbs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the reserved mushroom stems.
  3. Heat olive oil in a pan over medium heat. Add the chorizo, onion, and garlic. Cook until the chorizo is browned and the onion is softened.
  4. Remove from heat and stir in the chopped mushroom stems, Manchego cheese, and breadcrumbs. Season with salt and pepper.
