Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 100g chorizo, finely chopped
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 50g Manchego cheese, grated
- 2 tablespoons breadcrumbs
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Finely chop the reserved mushroom stems.
- Heat olive oil in a pan over medium heat. Add the chorizo, onion, and garlic. Cook until the chorizo is browned and the onion is softened.
- Remove from heat and stir in the chopped mushroom stems, Manchego cheese, and breadcrumbs. Season with salt and pepper.
