Chorizo And Potato Empanadas

Ingredients

  • 1 pound chorizo, casing removed and crumbled
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 sheets of store-bought pie crust or homemade empanada dough
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, cook the chorizo over medium heat until browned. Remove from the skillet and set aside.
  2. In the same skillet, add the diced potatoes and cook until they are tender. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  3. Return the cooked chorizo to the skillet and add the paprika, cumin, salt, and pepper. Stir to combine and remove from heat.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the pie crust or empanada dough and cut it into circles using a round cutter or a small plate as a guide.
  6. Place a spoonful of the chorizo and potato mixture onto each dough circle. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
  7. Place the empanadas on a baking sheet lined with parchment paper, brush the tops with the beaten egg, and bake for 20-25 minutes or until golden brown.
