Chorizo Stuffed Plantains (tostones De Chorizo)

Ingredients

  • 2 ripe plantains
  • 1/2 lb chorizo, casing removed
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the vegetable oil in a skillet over medium heat.
  3. Add the plantain slices to the skillet and cook for 2-3 minutes on each side, until they are golden and slightly flattened.
  4. Remove the plantains from the skillet and place them on a paper towel to drain excess oil.
  5. In the same skillet, cook the chorizo over medium heat, breaking it into small pieces with a spatula, until it is fully cooked.
  6. Cut a small slit in the center of each plantain slice to create a pocket, then stuff each one with the cooked chorizo.
  7. Secure the stuffed plantains with toothpicks.
  8. Return the stuffed plantains to the skillet and cook for an additional 2-3 minutes on each side, until they are crispy and heated through.
  9. Remove the toothpicks before serving and sprinkle with salt to taste.
