Ingredients
- 2 ripe plantains
- 1/2 lb chorizo, casing removed
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a skillet over medium heat.
- Add the plantain slices to the skillet and cook for 2-3 minutes on each side, until they are golden and slightly flattened.
- Remove the plantains from the skillet and place them on a paper towel to drain excess oil.
- In the same skillet, cook the chorizo over medium heat, breaking it into small pieces with a spatula, until it is fully cooked.
- Cut a small slit in the center of each plantain slice to create a pocket, then stuff each one with the cooked chorizo.
- Secure the stuffed plantains with toothpicks.
- Return the stuffed plantains to the skillet and cook for an additional 2-3 minutes on each side, until they are crispy and heated through.
- Remove the toothpicks before serving and sprinkle with salt to taste.
