Ingredients

  • 2 cups fresh corn kernels
  • 1/4 cup all-purpose flour
  • 1/4 cup milk
  • 1 egg
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a blender, puree 1 cup of the corn kernels with the flour and milk until smooth.
  2. Transfer the mixture to a bowl and stir in the remaining corn kernels, egg, sugar, salt, and black pepper.
  3. Heat the vegetable oil in a skillet over medium heat.
  4. Pour 1/4 cup of the batter into the skillet for each pancake.
  5. Cook for 3-4 minutes on each side, until golden brown.
  6. Serve hot and enjoy!
