Chotlho Chomp

Ingredients

  • 1 kg beef, cubed
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 cups beef broth
  • 1 cup water
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the ground coriander, cumin, paprika, and cayenne pepper. Cook for 2 minutes to toast the spices.
  4. Add the diced tomatoes, beef broth, and water to the pot. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the beef is tender.
  6. Serve the Chotlho Chomp hot, accompanied by steamed rice or traditional Botswana bread.
