Choucroute Garnie is a classic dish from the Alsace region of France, featuring sauerkraut cooked with a variety of meats and potatoes. It's a hearty and flavorful dish that is perfect for a cozy dinner on a cold evening.
Ingredients
- 2 lbs sauerkraut
- 1 onion, sliced
- 4 slices bacon, chopped
- 1 lb smoked sausage, sliced
- 1 lb pork chops
- 1 lb potatoes, quartered
- 2 cups chicken broth
- 1 cup dry white wine
- 2 cloves garlic, minced
- 2 bay leaves
- 1 tsp caraway seeds
- Salt and pepper to taste
Instructions
- In a large Dutch oven, cook the bacon over medium heat until crispy.
- Add the sliced onion and cook until softened.
- Add the sauerkraut, potatoes, sausage, pork chops, garlic, bay leaves, and caraway seeds to the pot.
- Pour in the chicken broth and white wine. Season with salt and pepper.
- Cover and simmer for 2 hours, stirring occasionally, until the meats are cooked through and the flavors are well blended.
- Remove the bay leaves before serving.
