Ingredients

  • 1 lb mixed seafood (such as shrimp, calamari, and fish fillets)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup vegetable broth
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large tagine or skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced red bell pepper and continue to cook for a few minutes.
  4. Stir in the ground cumin, paprika, coriander, cayenne pepper, and cinnamon, and cook for 1-2 minutes to toast the spices.
  5. Pour in the diced tomatoes and vegetable broth, and bring the mixture to a simmer.
  6. Add the mixed seafood to the tagine, cover, and simmer for 15-20 minutes until the seafood is cooked through.
  7. Season with salt and pepper, and sprinkle with chopped cilantro before serving.
