Ingredients
- 1 lb mixed seafood (such as shrimp, calamari, and fish fillets)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cinnamon
- 1 can (14 oz) diced tomatoes
- 1/2 cup vegetable broth
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large tagine or skillet over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the sliced red bell pepper and continue to cook for a few minutes.
- Stir in the ground cumin, paprika, coriander, cayenne pepper, and cinnamon, and cook for 1-2 minutes to toast the spices.
- Pour in the diced tomatoes and vegetable broth, and bring the mixture to a simmer.
- Add the mixed seafood to the tagine, cover, and simmer for 15-20 minutes until the seafood is cooked through.
- Season with salt and pepper, and sprinkle with chopped cilantro before serving.
