Christmas Island Crab And Pineapple Fried Rice

Ingredients

  • 1 lb lump crab meat
  • 2 cups cooked jasmine rice, chilled
  • 1 cup fresh pineapple, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp sesame oil
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup cashews, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a wok or large skillet, heat sesame oil over medium-high heat.
  2. Add garlic and red bell pepper, and stir-fry for 2 minutes.
  3. Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until set.
  4. Add crab meat, pineapple, and chilled rice to the wok. Stir-fry for 3-4 minutes.
  5. Stir in soy sauce and fish sauce, and cook for an additional 2 minutes.
  6. Remove from heat and stir in green onions and cilantro.
  7. Top with chopped cashews and serve with lime wedges.
