Ingredients
- 1 lb lump crab meat
- 2 cups cooked jasmine rice, chilled
- 1 cup fresh pineapple, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 eggs, beaten
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- 1 tbsp sesame oil
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup cashews, chopped
- 1 lime, cut into wedges
Instructions
- In a wok or large skillet, heat sesame oil over medium-high heat.
- Add garlic and red bell pepper, and stir-fry for 2 minutes.
- Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until set.
- Add crab meat, pineapple, and chilled rice to the wok. Stir-fry for 3-4 minutes.
- Stir in soy sauce and fish sauce, and cook for an additional 2 minutes.
- Remove from heat and stir in green onions and cilantro.
- Top with chopped cashews and serve with lime wedges.
