Christmas Island Crab Rendang

Ingredients

  • 1 kg fresh crab, cleaned and cut into pieces
  • 4 cups coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 3 red chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp fennel powder
  • 2 tbsp tamarind paste
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies. Sauté until fragrant.
  2. Add turmeric, coriander, cumin, and fennel powder. Stir well to combine.
  3. Pour in coconut milk and bring to a gentle simmer.
  4. Add crab pieces and tamarind paste. Season with salt. Simmer for 1.5 to 2 hours, stirring occasionally, until the sauce thickens and the crab is cooked through.
  5. Serve the Christmas Island Crab Rendang hot with steamed rice.
