Christmas Island Crab Rendang

Ingredients
- 1 kg fresh crab, cleaned and cut into pieces
- 4 cups coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 3 red chilies, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp fennel powder
- 2 tbsp tamarind paste
- Salt to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat vegetable oil over medium heat. Add shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies. Sauté until fragrant.
- Add turmeric, coriander, cumin, and fennel powder. Stir well to combine.
- Pour in coconut milk and bring to a gentle simmer.
- Add crab pieces and tamarind paste. Season with salt. Simmer for 1.5 to 2 hours, stirring occasionally, until the sauce thickens and the crab is cooked through.
- Serve the Christmas Island Crab Rendang hot with steamed rice.
